Bay Laurel Tree
Laurus nobilis. The true bay leaf tree used extensively in Mediterranean cooking. Forms a small pyramid-shaped tree or shrub with aromatic, evergreen leaves. Much of the "bay leaf" available in the US comes from the California bay tree Umbellularia californica. There is considerable difference between the substitute and the genuine Laurus nobilis.

Calamintha - Georgia Savory Basil
Clinopodium georgianum or Satureja georgiana. This little-known plant is an overlooked treasure. Highly aromatic, semi-evergreen. Resembles rosemary somewhat and is covered in pale pink flowers during warmer parts of the year. It is native to the southeastern US and has a mint smell that can rival most mint plants. It is non-invasive and drought tolerant but can stand wet soil.

Cardamom
Elleteria cardamom. Yes, this is the true cardamom spice of commerce. Cardamom has a strong, intensely aromatic taste and fragrance. It is a principal ingredient in curry powders, and is used to flavor confectioneries, liqueurs, chewing gums, sausage, and as an ingredient in some perfumes. Foliage is reminiscent of many gingers or seedling palm trees.

Cinnamomum zeylanicum. A number of trees in the Cinnamomum genus produce cinnamon but the finest comes from this plant, Cinnamomum zeylanicum. It comes from Sri Lanka- formerly known as Ceylon, hence the name zeylanicum. Cinnamon sticks are the dried bark from branches of this tree. The leaves have a strong scent of cinnamon and have medicinal oil qualities. An excellent container tree when grown indoors or in the greenhouse.
